Whenever we think of creamy, hot and delicious soups, the one that pops up immediately is cream of tomato soup. It is very easy to prepare and is also good for weight reduction. Let’s see how fresh organic tomato soup is made.
Ingredients:
- 4 large tomatoes
- 1 onion (small)
- 1 tablespoon corn flour/arrowroot
- Skimmed milk (1/2 cup)
- Stock/water (1 cup)
- Butter – 1 tablespoon
- Salt
- Pepper
- Bread pieces roasted in ghee (optional)
Preparation:
- Heat the pan and put half tablespoon of butter in it.
- Add the chopped onion and tomatoes and fry them for 5 minutes.
- Add the water/stock to it and cook the vegetables for 20 minutes or until it softens.
- Use a blender and blend the mixture well.
- Strain the soup mixture.
- Add the remaining butter into the pan and heat it.
- Add arrowroot/corn flour to the mixture and heat it for 3 minutes until the mixture thickens. The corn flour should be stirred well in a little hot water and then added to the mixture, else there would be clots of corn flour visible in the soup.
- You can also add tomato puree for extra tomato taste.
- Finally, add the milk and heat it to serving temperature.
- Just before serving, add the bread pieces.
