Sweet Corn Casserole is a quick and rib-sticking meal for just about any occasion. It’s easy to prepare and carry to gatherings of any kind (just make sure the ingredients are organic) If you have fresh corn all the better, just adjust the recipe to the same amount:
1 can creamed corn
1 can whole sweet corn (don’t drain)
1/2 stick of butter, melted
1 egg, beaten
1 package of cornbread mix
1-1/2 cups grated cheese, sharp is especially good in this recipe
salt and pepper to taste
Mix all ingredients and put into a casserole dish. Bake 350 deg. for about 40 minutes. (Electric ovens may need to bake a little longer.) This recipe looks and tastes like you spent a lot of time preparing. Shhhh!
