Sprouted and flourless breads are made from sprouted grains and legumes, then ground into flour. These sprouts provide amino acids which are the building blocks of proteins, making them ideal for anyone trying to cut back on animal proteins and fats.

When whole wheat berries or other grains are soaked in water and sprouted, they are ground and baked into bread. Other grains that are often used for flourless bread are millet, barley and spelt. One brand of bread also uses sprouted lentils and soybeans which makes the bread a complete protein.

Sprouted grain breads generally have higher vitamin content because the seeds are live sprouts. Nothing has been stripped from the grain and added back so they do not contain processed flour. White bread, on the other hand, has been stripped of healthy components including fiber, and then bleached to take out the remaining nutrients.

Flourless breads are not made with yeast and incorporate unrefined ingredients so they have a shorter shelf life. Most sprouted grain breads are sold either refrigerated or frozen to preserve the moist and natural sweet flavor. Because flourless breads contain less saturated fat, a light toasting is all that is needed.

If you keep an eye on the glycerin index, you should be able to enjoy this bread at around a modest 45. For those who are concerned about gluten, these sprouted and flourless grains may not be your best choice. You may still have trouble digesting the wheat protein.
Generally the sprouts used to make these breads are organic and grown without herbicides and pesticides. That’s reason enough to switch to eating simply organic foods that are live or very lightly processed.

  1. The good news is that slow and steady can win the race, as long as you are disciplined and continue making progress with the change. One trick is to slowly but surely start bringing in lower GI foods into your diet. Buy at least one item on your low glycemic index list and eliminate one item on your high glycemic list. In due course, you will find that it will become easier and easier to make the change you want. Your chances of success will greatly increase. Before you know it, you will be feeling better, healthier and more energetic about yourself.
